I just wanted to put this out there, since it came out so well and is an alternative to strawberry shortcake when you are feeling a bit burned-out on the berries. Though I do like my friend's husband's idea of strawberry margaritas too!
Freezer jam was inspired by a blog I read, House on Hill Road and this post. She lays everything out and I just followed her advice and the instructions on the back of the pectin I bought.
Basically, in the baking aisle at my major grocery store I was able to find the jars, a canning funnel and freezer jam (no-cook) pectin. After trimming our 7 lbs of strawberries, Bea had at it with a potato masher, I added the sugar and pectin and we got ourselves seven jars of jam. My math was off, but it all set up nicely nevertheless. It tastes super-duper sweet, but I like it that way.
